Winemaker’s Notes
The Amberley vineyards are planted in the gravelly loam soils of Margaret River. Here, the vines are cooled by nearby ocean breezes and combined with our viticultural practices, allows us? to produce wines with elegant flavours.
2012 Vintage
A wet winter provided excellent water reserves for the vines during the growing?season. Spring was relatively dry, with temperatures mild, providing good conditions up to and including? lowering. Summer was generally warm, with only a couple of days over 35 degrees celsius and intermittent rainfall that provided relief to the vines. This allowed for an excellent? environment for slow ripening and development of flavours in the grapes.
Winemaking
Individual vineyard parcels were fermented separately in open top stainless steel fermenters and pressed off through a basket press. This was followed by malolactic fermentation and 9 months in seasoned French oak. Parcels were selected for blending prior to light fining, filtration and bottling.
Tasting Notes
Clear, deep crimson in colour with a youthful ruby hue, this wine displays pronounced primary fruit characters of raspberry and blood plum on the bouquet, complemented by nuances of dark chocolate and tobacco leaf, with toasty oak notes. The palate is vibrant with silky fruit characters of cassis and raspberry with a hint of mint. The soft, juicy palate is beautifully textured with a creamy vanillin oak finish.
Food Pairing
Enjoy with braised rabbit served with new baby potatoes.
